When I was in college, I hosted small get together’s almost every weekend. It was usually just my roommates (I lived with 5 other girls, it was as crazy as it sounds). Or friends from other apartments in our complex. I was not your typical “party girl” but I love being surrounded by people. One of my favorite things to do was make a Mocktail for my friends to test. I don’t drink alcohol, but mixed drinks have always peaked my interest. It was so much fun, and I have very fond memories of those days.
If you follow me on Instagram, you may have heard me talk about my battle with Depression and Anxiety. One of the things I have struggled with, is feeling a disconnect between “old me” (pre-marriage, stress, kids etc..) and me now. As I work through these thoughts and work toward healing, I am realizing I didn’t lose the girl I wanted to be, but I stopped doing so many of the things that make me happy. So I am trying to do them again. The current state of things is putting a damper on my ability to host gatherings and see people in real life, but I can still share something fun with you all!
I am sharing two of my favorite Mocktail recipes, my take on a Paloma and a Painkiller. These drinks have a bright and fruity flavor, and are so refreshing as we head into summer. You need just a few ingredients to make them, you may even have what you need already in your fridge.

This refreshing spritzer is simple to make and a perfect addition to a summer brunch or bbq. Similar in flavors to a Paloma, but alcohol free!
- 1/3 c. Grapefruit juice
- 2 tsp. Vanilla simple syrup
- 1 tblsp Lime juice
- 1/2 cup Seltzer water or club soda
Pour ingredients over ice, mix and enjoy!
This sweet and creamy drink is bursting with pineapple and coconut flavor.
- 1 6 oz can Dole pineapple and orange juice
- 2 tsp Coconut Cream
- 1 tsp vanilla simple syrup
- Fresh berries (use whatever you like!)
Whisk juice, syrup and coconut cream until well blended. Add ice and top with your favorite fresh berries. Enjoy!
